About Kurohana

Where is Kurohana beef sourced from?

Kurohana beef originates from Kumamoto, Japan. Sugimoto-Honten Ltd operates approximately 100 farms, cultivating around 30,000 Kurohana cows across the Kyushu region of Japan.

What is the grading of Kurohana beef?

Our Kurohana beef is classified as A5 grade, with a Marbling Score (MBS) ranging from 8 to 12.

What does A5 signify?

Wagyu beef is graded based on several factors including Yield, Marbling, Color, Texture, Firmness, and Luster. A5 represents the highest grade, denoting exceptional quality in these attributes.



Wagyu grading is divided into two categories of (1) yield grade and (2) meat quality grade.

Yield Grade is determined by evaluating the final meat yield, with carcasses categorized into three ranks: A for above average, B for average, and C for below average.

Meat quality grade is assessed according to (1) marbling (2) meat color and brightness (3) firmness and texture and (4) luster and quality of fat. All four aspects of meat quality are graded on a scale of 1 to 5, with 5 being the highest.

What is the diet of Kurohana cows?
